So… much… going… on! Feeling… over… whelmed.

Youth trip to Narnia… WOW!!

Saturday, December 17th, 2005

I’ve never known a movie that stuck as close to the book as this did. It did diverge from the book in a place or two, but nothing that made me mad. I loved St. Nick. He was perfect in his old fashioned clothes and not in the frumpy fur-lined red suit everybody depicts him in these days. It was just a really good movie. If we had the money, Jeremy and I would go see it again and take Amie and James this time, but they may have to wait until the DVD. Aslan was beautiful. Now, you have to know how much I love big cats, so I was worried about Aslan having something taken away from his Lionishness when he talked, but they did a wonderful job with that. He just had an awesome presence in the movie. We’ll be talking about the ways this movie is like the Christian faith in youth on Wednesday night. All, but one, of our youth members went last night and every single one of them left saying how much they loved it.

Only thing I regret…

I didn’t bring my tissues.

That tiny little 3 lb 15 oz baby in an incubator has grown into a cute little 21 and 1/2 lb toddler.

Happy Birthday to my beautiful baby girl, Noelle Arwen!

Edit: I added a few more pictures of the birthday girl.

Recipe for No-Bake Chocolate Cheesecake

Wednesday, December 14th, 2005

Graham cracker crust in 9″ pie pan (I usually buy this already made.)

8 oz Semi-sweet baking chocolate, broken into pieces

9 oz cream cheese, softened (I get it out of the fridge about half an hour before I plan on fixing it and it’s usually soft enough by then.)

1/4 cup sugar

1/4 cup butter, softened

1 teaspoon vanilla

1 cup cold whipping cream (actually, I take the short cut and buy a tub of already whipped cream and use a little over half of an 8 oz tub.)

Beat cream cheese, butter, sugar, and vanilla in large bowl until smooth.

Place chocolate in microwave-safe bowl and heat on high for a minute or so until it is melted. Let it cool slightly, but not too long.

Add chocolate to the cream cheese mixture. Beat on low speed.

Beat whipping cream in small bowl until stiff (or in my case, just take it straight of the refrigerator.) Fold into cream cheese mixture.

Pour into graham cracker crust. Cover and refrigerate until firm.

It tastes a bit like a French Silk cheese cake… or so I think. My sister really enjoyed it and I think I gave my mom this recipe as well, but I don’t remember. I have another cheese cake recipe (Peanut butter chocolate) that I use and I may have given that to her. It is one that requires baking.

Enjoy!

Asthma is no fun

Wednesday, December 14th, 2005

Last night, I went to get Christine’s singulair, but had to stop in the bathroom beforehand. By the time I got back (no longer than 5 minutes) she was already asleep. I thought, “No big deal, she’s missed a dose before and had no problems.” I settled down and read until about 11pm. As I was putting my book away and getting ready to turn out the light, I noticed that Christine had very labored breathing. It turned into a full-blown asthma attack as I was finding the nebulizer mouthpiece and albuterol to put in it. Jeremy got her down from the bunk bed and I sat with her leaning against me and held the mouthpiece up to her mouth. She was so tired, but she was having so much trouble breathing. After her 5 minute neb. treatment, I gave her the singulair and some prednisone. I propped up her pillow so she was laying at an angle and she slept fairly well the rest of the night. This morning, I gave her an expectorant and a puff from her steroid inhaler. She’s doing much better now.

Yummmmmm… Chocolate cheese cake

Tuesday, December 13th, 2005

I made a chocolate cheese cake yesterday. I was craving it so much. It was a no-bake recipe and I kind of like it better than the baked ones I’ve made. Amie had fun helping me mix it and all the girls enjoyed licking the bowl, spoons, and mixer whirligigs. I gave James a small piece of candy to make up for not being able to lick anything. This was Noelle’s first time of licking and she pulled out one of her baby spoons to use because she didn’t want to put her fingers in it. She still got it all over her clothes.

Children’s Christmas Program

Monday, December 12th, 2005

Amie and James had their Christmas Program at church yesterday. I was in it as well. It went pretty good. I was proud of my kids. I could hear them singing above all the other kids. Usually by that age, the kids get where they don’t sing very loud anymore, but my kids have me around and I work on being loud so my voice carries. They have learned how to project their voices as well. I had a lot of people come and say that they could hear Amie all the way in the back and there were no microphones for the kids.

There were two children who came up to be saved last night, so it was a wonderful end to the play.

Not feeling well

I’ll update on the Children’s Christmas Program yesterday when I feel a bit better.

A Puppy and a Pixie

Friday, December 9th, 2005

I met Jeremy when we both started going to Missouri Baptist College (it’s a University now.) I was in my sophomore year and he was in his freshman year. They had a “Welcome Weekend” for all the new students. During an outside dinner that weekend, my new friends and I sat down at a table to eat. I, being very talkative, was not done eating when they were, so I stayed there to finish while they went off to play some of the games. Some of the guys sat down to eat at the recently vacated seats. I introduced myself and they all gave me their names. One of them was Jeremy.

Postless

Wanted to blog something… can’t remember what it was. Blank mind, so I decided to just type a nothing post. Don’t know why. Maybe something will come up to talk about later.

I feel like being weird today.
